Nothing’s going on with the house until tomorrow, so I made comfort food. Thank you Robb Walsh for the best cheese enchilada recipe anywhere.
With the help of Gary and Dave, I made corn tortillas:
Then I made this incredibly delicious chili gravy. Chili gravy is just a light roux with lots of chili powder, cumin, and a few other spices.
The final result, stuffed with Missouri colby cheese and chopped onions:
These were the best cheese enchiladas I have ever eaten, in any state. Come visit us and I’ll make them again.
