Kale Slaw for a Crowd


Veggies

  • 3 bunches tuscan kale (aka, lacinato or dinosaur), thick stem removed and chopped into smallish pieces
  • 2 heads of red cabbage –  grated in food processor
  • 3 large carrots – peeled and grated
  • 1 red onion – halved and thinly sliced

Seeds

  • 1 cup pumpkin seeds, toasted
  • 1 cup sesame seeds, toasted

(I didn’t use sunflower seeds because I didn’t have them. But they are really good in this.)

Dressing

  • 1/2 cup olive oil
  • 1/2 cup  dijon mustard
  • 1/4 cup apple cider vinegar

Directions and notes

  1. Combine the veggies
  2. Toast the seeds of they are untoasted.
  3. Combine the dressing ingredients in a jar and shake them up.
  4. Combine all the ingredients.
  5. Add salt and pepper.
