Today I baked the 100% Whole Wheat Sandwich Bread from Peter Reinhart’s Whole Grain Breads.
I doubled the recipe and made 2 sandwich loaves and one small boule. I used organic hard red winter wheat – which Gary ground in our grain mill. It’s been years since I made 100% whole wheat bread, so I was surprised at how well it rose. We got some serious oven spring. And it smells delicious!
The recipe, found here, takes two days. And it is worth every minute of waiting. The night that the biga and the soaker spend in the refrigerator makes a huge difference in the flavor. This is the most delicious whole wheat bread I’ve tasted. The texture is perfect too.
If you want to bake the bread and you don’t have bread baking experience, just buy the book and follow the recipe carefully. It’s well written and easy to understand. Happy baking!
