Veggies
- 3 bunches tuscan kale (aka, lacinato or dinosaur), thick stem removed and chopped into smallish pieces
- 2 heads of red cabbage – grated in food processor
- 3 large carrots – peeled and grated
- 1 red onion – halved and thinly sliced
Seeds
- 1 cup pumpkin seeds, toasted
- 1 cup sesame seeds, toasted
(I didn’t use sunflower seeds because I didn’t have them. But they are really good in this.)
Dressing
- 1/2 cup olive oil
- 1/2 cup dijon mustard
- 1/4 cup apple cider vinegar
Directions and notes
- Combine the veggies
- Toast the seeds of they are untoasted.
- Combine the dressing ingredients in a jar and shake them up.
- Combine all the ingredients.
- Add salt and pepper.
